Main Dish Recipes - Chicken Jardinière au Vermouth

Ingredients  

  • 1 3-lb. broiler chicken, cut into pieces

  • 1 clove garlic, crushed

  • 2 Tbs. oil

  • 1 carrot

  • 1 small zucchini

  • 1 stalk celery

  • 1/4 tsp. thyme

  • 1/4 tsp. pepper

  • 1 cup Holland House@ Vermouth Cooking Wine

  • 1 cup frozen peas

  • 1 small can whole mushrooms

  • 2 tsps. corn starch

Makes 6 servings


Method:

  1. Rub chicken with garlic. Heat oil in saucepan, add chicken and brown on both sides.

  2. Add fresh vegetables (all cut into 2-inch-by-1/4-inch sticks), thyme, pepper and Holland House Cooking Wine.

  3. Stir to deglaze pan. Cover and simmer 30 minutes. Add peas and mushrooms.

  4. Stir in com starch/water mixture. Bring to a boil, simmer 5 more minutes and serve.
