Chicken Jardinière au Vermouth
Ingredients

1 3-lb. broiler
chicken, cut into pieces
-
1 clove garlic,
crushed
-
2 Tbs. oil
-
1 carrot
-
1 small zucchini
-
1 stalk celery
-
1/4 tsp. thyme
-
1/4 tsp. pepper
-
1 cup Holland House@
Vermouth Cooking Wine
-
1 cup frozen peas
-
1 small can whole mushrooms
-
2 tsps. corn starch
Makes 6 servings
Method:

Rub chicken with garlic. Heat oil in saucepan, add
chicken and brown on both sides.

Add fresh vegetables
(all cut into 2-inch-by-1/4-inch sticks), thyme, pepper
and Holland House Cooking Wine.

Stir to deglaze pan.
Cover and simmer 30 minutes. Add peas and mushrooms.

Stir in com starch/water mixture. Bring to a boil,
simmer 5 more minutes and serve.
