Main Dish Recipes - Best Beef Bourguignon

Ingredients

  • 1/2 lb. mushrooms, sliced

  • 1/4 cup butter                              

  • 3 slices bacon, cut up                

  • 2 lbs. boneless beef, cut in 2-inch cubes

  • 2 Tbs. flour

  • 2 cloves garlic, crushed

  • 1 Tbs. tomato paste

  • 1 1/4 cups Holland House Red Cooking Wine

  • 2 beef bouillon cubes

  • 2 Tbs. sugar

  • 1/4 tsp. salt

  • 1/4 tsp. thyme

  • 1 small bay leaf

  • 1 peppercorn

  • 1/2 lb. small white onions

Makes 8 to 10 servings


Method:

  1. In large pot, sauté mushrooms in butter; remove mushrooms and set aside. Fry bacon until crisp; remove and set aside.

  2. Add meat to drippings and brown well. Blend in flour. Add garlic, tomato paste, wine and seasonings.

  3. Cover and simmer for 2 hours, stirring occasionally. Add onions, mushrooms and bacon; simmer 1 hour longer. Add additional wine if liquid has evaporated.

  4. Garnish with cherry tomatoes and serve over rice if desired.
