Italian Soups and Salads Recipes
- Insalata Mista
Ingredients

4 cups torn mixed
salad greens (such
as radicchio, spinach, arugula, and/or chicory)

1 cup yellow and/or red cherry tomatoes, halved

1/4 cup
snipped fresh oregano or basil

1/2
cup pitted
black olives

1 recipe
Balsamic Vinaigrette
-
3
ounces thinly sliced fresh mozzarella cheese
Makes about 1/4 cup
Method:

In a
large serving bowl toss together mixed greens, cherry tomatoes,
oregano or basil, and olives.

Drizzle Balsamic Vinaigrette over
salad; toss to coat. Top with mozzarella cheese.
BALSAMIC VINAIGRETTE:
In a
screw-top jar combine 2 tablespoons olive oil or salad oil, 2
tablespoons balsamic vinegar, 2 teaspoons snipped fresh oregano or
basil, 1/8
teaspoon salt, and 1/8
teaspoon black pepper. Cover and shake well to combine. Serve
immediately or cover and store in the refrigerator for up to 2
weeks. Shake before serving.
