Italian Soups and Salads Recipes - Bread Salad

Ingredients            

  • 1/4 cup olive oil

  • 3 tablespoons red wine vinegar

  • 3 tablespoons snipped fresh oregano

  • 1/2 teaspoon sugar

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 ounces whole wheat sourdough or other country-style bread, cut into 1 1/2-inch cubes

  • 1/2 of a 10-ounce package Italian-style torn mixed salad greens (about 5 cups)

  • 1 medium tomato, cut into thin wedges

  • 1/4 cup halved yellow cherry tomatoes or yellow sweet pepper cut into 1/2-inch pieces

  • 1/2 cup pitted ripe olives


Method:

  1. For dressing, in a screw-top jar combine olive oil, wine vinegar, oregano, sugar, salt, and black pepper. Cover and shake well.

  2. In a large salad bowl combine bread cubes, mixed greens, tomato wedges, cherry tomatoes or sweet pepper, and olives. Pour dressing over; toss gently to coat. Serve immediately.
