- Zucchini Alla Romana
Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
4 small zucchini, sliced
(4 cups)
1 teaspoon dried mint or
dried basil, crushed, or tablespoon
snipped fresh mint or basil
1/4 teaspoon salt
Dash black pepper
2 tablespoons finely
shredded Romano or Parmesan cheese
Method:
In a
large skillet heat olive oil over medium heat. Add garlic; cook
for 30 seconds.
Add zucchini, dried mint or basil (if using), salt,
and pepper to oil in skillet. Cook, uncovered, over medium heat
about 5 minutes or until zucchini is crisp-tender, stirring
occasionally.
To
serve, sprinkle with Romano cheese and fresh mint or basil (if
using).
