Italian Sides Dishes Recipes - Puttanesca Sauce with Pasta

Ingredients

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 14 1/2-ounce can diced tomatoes, un-drained

  • 4-ounce can (drained weight) sliced mushrooms, drained

  • 1/4 cup dry red wine or chicken broth

  • 2 tablespoons tomato paste

  • 1/8 teaspoon crushed red pepper

  • 12 small pitted ripe olives, sliced

  • 3 canned anchovy fillets, cut into 1/2-inch pieces (optional)

  • 3 tablespoons snipped fresh flat-leaf parsley

  • 8 ounces dried pasta, cooked according to package directions and drained

  • Fresh flat-leaf parsley sprigs (optional)


Method:

  1. In a large skillet cook onion and garlic in hot olive oil until tender. Add un-drained diced tomatoes, mushrooms, wine, tomato paste, and crushed red pepper.

  2. Bring to boiling; reduce heat. Simmer, uncovered, for 15 to 20 minutes or until sauce is desired consistency.

  3. Stir in olives, anchovies (if desired), and snipped parsley; heat through. Serve over hot pasta. If desired, garnish with parsley sprigs.
