- Puttanesca Sauce with Pasta
Ingredients

1 medium onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil
-
14 1/2-ounce can diced
tomatoes, un-drained
-
4-ounce can (drained
weight) sliced mushrooms, drained

1/4 cup dry red wine or
chicken broth
-
2 tablespoons tomato
paste
-
1/8 teaspoon crushed red pepper
-
12 small pitted
ripe olives, sliced
-
3 canned anchovy
fillets, cut into 1/2-inch pieces (optional)

3 tablespoons snipped
fresh flat-leaf parsley
-
8 ounces dried pasta,
cooked according to package directions and drained

Fresh flat-leaf
parsley sprigs (optional)
Method:
-
In a
large skillet cook onion and garlic in hot olive oil until tender.
Add un-drained diced tomatoes, mushrooms, wine, tomato paste, and
crushed red pepper.

Bring to boiling; reduce heat. Simmer,
uncovered, for 15 to 20 minutes or until sauce is desired
consistency.

Stir in olives, anchovies (if desired), and snipped
parsley; heat through. Serve over hot pasta. If desired, garnish
with parsley sprigs.
