Ingredients

1 10-ounce package
frozen lima beans
-
1 8-ounce package
frozen sugar snap peas or one

9-ounce package
frozen Italian green beans
-
1 6-ounce jar
marinated artichoke hearts, un-drained
tablespoon snipped fresh dill
-
1/8 teaspoon
crushed red pepper
-
Romaine leaves
-
1 green onion,
thinly sliced (optional)
-
Fresh dill sprigs
(optional)
Method:

In a medium saucepan cook lima
beans and sugar snap peas in a small amount of
boiling water for 5 to 8 minutes or until
crisp-tender; drain. Rinse with cold water;
drain again.

In a medium bowl combine lima
bean mixture, un-drained artichoke
hearts, snipped dill, and crushed red pepper.
Cover and chill for 4 to 24 hours.

To serve, line salad plates with
romaine. Spoon lima bean mixture over romaine.
If desired, sprinkle with sliced green onion and
garnish with fresh dill sprigs.
