Italian Sides Dishes Recipes - Italian-Style Vegetables

Ingredients

  • 1 10-ounce package frozen lima beans

  • 1 8-ounce package frozen sugar snap peas or one

  • 9-ounce package frozen Italian green beans

  • 1 6-ounce jar marinated artichoke hearts, un-drained tablespoon snipped fresh dill

  • 1/8 teaspoon crushed red pepper

  • Romaine leaves

  • 1 green onion, thinly sliced (optional)

  • Fresh dill sprigs (optional)


Method:

  1. In a medium saucepan cook lima beans and sugar snap peas in a small amount of boiling water for 5 to 8 minutes or until crisp-tender; drain. Rinse with cold water; drain again.

  2. In a medium bowl combine lima bean mixture, un-drained artichoke hearts, snipped dill, and crushed red pepper. Cover and chill for 4 to 24 hours.

  3. To serve, line salad plates with romaine. Spoon lima bean mixture over romaine. If desired, sprinkle with sliced green onion and garnish with fresh dill sprigs.
