- Sicilian Meat Roll
Ingredients

2 eggs

3/4 cup soft bread crumbs
(1 slice)

1/2
cup tomato juice
-
2 tablespoons snipped
fresh parsley
-
1/2 teaspoon dried
oregano, crushed

1/4 teaspoon salt
-
1/4 teaspoon black pepper

1 small clove garlic, minced
-
2 pounds lean ground
beef
-
6 ounces thinly
sliced prosciutto

1 1/2 cups shredded
mozzarella cheese (6 ounces)
Method:

Preheat
oven to 350°F. In a large bowl beat eggs with a fork. Stir in bread
crumbs, tomato juice, parsley, oregano, salt, pepper, and garlic.
Add ground beef; mix well.

On a large piece of foil, pat meat
mixture into a 12x10-inch rectangle. Arrange the prosciutto slices
on meat, leaving a 3/4-inch border around all edges. Sprinkle 1 1/4
cups of the mozzarella cheese over the prosciutto.

Starting from a
short end, carefully roll up meat rectangle, using foil to lift;
seal edges and ends. Place meat roll, seam side down, in a
13x9x2-inch baking pan.

Bake about 65 minutes or until an
instant-read thermometer inserted in the center registers 1600P and
juices run clear. (Center of meat roll will be pink due to prosciutto.)

Sprinkle remaining 1/4 cup mozzarella cheese over top
of meat roll. Return to oven about 5 minutes or until cheese melts.
Let stand for 10 to 15 minutes before slicing.
