Italian Recipes - Sausage Stew

Ingredients                     

  • 1 pound bulk Italian sausage

  • 2 14-ounce cans seasoned chicken broth with Italian herbs (3 1/2 cups)

  • 15-to 19-ounce can cannellini beans (white kidney beans), rinsed and drained

  • 14 1/2-ounce can diced tomatoes with basil, oregano, and garlic, un-drained

  • 9-ounce package refrigerated cheese-filled tortellini

  • Finely shredded Parmesan cheese (optional)


Method:

  1. In a large skillet cook sausage over medium heat until brown. Drain off fat.

  2. In a 3 1/2-to 4 1/2-quart slow cooker combine cooked sausage, broth, beans, and un-drained tomatoes.

  3. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours. Stir in uncooked pasta.

  4. Cover and cook on low-heat setting for 30 minutes more or on high-heat setting for 15 minutes more. If desired, sprinkle Individual servings with Parmesan cheese.
