Italian Recipes - Saucy One-Pan Ravioli

Ingredients       

  • 2 cups cherry tomatoes

  • 1/2 teaspoon bottled minced garlic (1 clove)

  • 3/4 cup chicken broth

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 9-ounce package refrigerated ravioli

  • 2 tablespoons snipped fresh basil

  • 1 tablespoon snipped fresh flat-leaf parsley

  • 1 cup shredded Romano or Parmesan cheese (1 ounce)


Method:

  1. In a blender or food processor combine cherry tomatoes and garlic. Cover and blend or process until smooth.

  2. Transfer to a large saucepan. Add chicken broth, salt, and pepper. Bring to boiling.

  3. Add ravioli. Return to boiling; reduce heat. Cover and simmer for 6 to 8 minutes or just until pasta is tender, stirring gently once or twice. Stir in basil and parsley.

  4. Spoon onto plates; sprinkle with cheese.
