- Salsiccia with Peppers and Potatoes
Ingredients

2 tablespoons olive
oil
-
4 uncooked mild
Italian sausage links (about 1 pound)

1/2
cup water
-
3 large potatoes,
peeled and thinly sliced
-
1 large green sweet
pepper, cut into strips
-
1 medium onion,
sliced and separated into rings
-
3
cloves garlic, minced
-
1 28-ounce can
crushed tomatoes, un-drained
-
2 teaspoons sugar
-
2 teaspoons dried
oregano, crushed
-
1/4 teaspoon salt
-
1/4 teaspoon black
pepper
Method:
-
In a very large
skillet heat 1 tbsp of the oil over medium heat.
Add sausage links; cook about 5 minutes or until
brown. Turning frequently.

Carefully add the
water. Bring to boiling; reduce heat. Cover and
simmer for 5 minutes. Uncover and cook sausage
until liquid evaporates and sausage do not burn.
Drain sausages on paper towels.

In the same
skillet heat remaining 1 tbsp oil over medium
heat. Add potatoes, sweet pepper, onion, and
garlic. Cook for 10 to 15 minutes or just until
potatoes are tender, turning mixture
occasionally.

Stir in un-drained
tomatoes, sugar, oregano, salt and black pepper.
Return sausage links to skillet. Bring to
boiling; reduce heat. Cover and simmer for 10
minutes.
