Italian Recipes - Salsiccia with Peppers and Potatoes

Ingredients       

  • 2 tablespoons olive oil

  • 4 uncooked mild Italian sausage links (about 1 pound)

  • 1/2 cup water

  • 3 large potatoes, peeled and thinly sliced

  • 1 large green sweet pepper, cut into strips

  • 1 medium onion, sliced and separated into rings

  • 3  cloves garlic, minced

  • 1 28-ounce can crushed tomatoes, un-drained

  • 2 teaspoons sugar

  • 2 teaspoons dried oregano, crushed

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper


Method:

  1. In a very large skillet heat 1 tbsp of the oil over medium heat. Add sausage links; cook about 5 minutes or until brown. Turning frequently.

  2. Carefully add the water. Bring to boiling; reduce heat. Cover and simmer for 5 minutes. Uncover and cook sausage until liquid evaporates and sausage do not burn. Drain sausages on paper towels.

  3. In the same skillet heat remaining 1 tbsp oil over medium heat. Add potatoes, sweet pepper, onion, and garlic. Cook for 10 to 15 minutes or just until potatoes are tender, turning mixture occasionally.

  4. Stir in un-drained tomatoes, sugar, oregano, salt and black pepper. Return sausage links to skillet. Bring to boiling; reduce heat. Cover and simmer for 10 minutes.
