Italian Recipes - Roasted Pepper-Turkey Sandwiches

Ingredients     

  • 1/3 cup fine dry bread crumbs

  • 2 teaspoons dried Italian seasoning, crushed

  • 2 turkey breast tenderloins (about 1 pound total)

  • 2 teaspoons olive oil

  • 2 tablespoons snipped fresh basil

  • 1/4 cup light mayonnaise or salad dressing

  • 8 1/2-inch-thick slices Italian bread, toasted

  • 1 cup bottled roasted red and/or yellow sweet peppers, cut into thin strips

  • Fresh basil leaves (optional)


Method:

  1. In a large resealable plastic bag combine bread crumbs and Italian seasoning. Split each turkey breast tenderloin in half horizontally.

  2. Place a turkey tenderloin piece in the bag; seal and shake to coat. Repeat with remaining pieces.

  3. In a 12-inch nonstick skillet heat olive oil over medium heat. Add turkey; cook about 10 minutes or until tender and no longer pink (170°F), turning once.

  4. In a small bowl stir 1 tablespoon of the snipped basil into the mayonnaise. Spread mayonnaise mixture on one side of four of the bread slices.

  5. Top bread slices with turkey, sweet pepper strips, and the remaining 1 tablespoon snipped basil. If desired, garnish with basil leaves. Top with remaining bread slices.
