- Pizza-Sauced Fish with Spinach Fettuccine
Ingredients

1 1/2 pounds fresh or
frozen white fish fillets, 1/2 to 3/4
inch thick

1/2
teaspoon
lemon-pepper seasoning
-
Nonstick cooking
spray
-
12 ounces dried
spinach fettuccine
-
1 8-ounce package
sliced fresh mushrooms
-
1 medium green sweet
pepper, chopped
-
1 medium onion,
chopped
-
2 teaspoons cooking
oil
-
1 8-ounce can pizza
sauce
-
1/2 cup shredded
mozzarella cheese (2 ounces)
Method:

Thaw fish, if frozen. Rinse fish; pat dry with paper
towels. Preheat oven to 450°F.

Cut the fish Into six serving-size pieces. Sprinkle
fish with lemon-pepper
seasoning. Coat a 2-quart rectangular baking dish
with nonstick cooking spray. Place fish in the
prepared baking dish, tucking under any thin edges.

Bake until fish flakes easily when tested with a
fork (allow 6 to
9 minutes per 1/2-inch thickness of fish). Drain off
any liquid.

Meanwhile, cook fettuccine according to
package directions. For sauce, in a medium saucepan
cook mushrooms, sweet pepper, and onion in hot oil
about 5 minutes or until tender, stirring
occasionally.

Add pizza sauce; heat through. Serve
fish on hot cooked fettuccine; spoon sauce over
fish. Sprinkle with cheese.
