Italian Recipes - Peasant Pizza with Goat Cheese

Ingredients     

  • 1 14-ounce Italian bread shell (such as Boboli brand) ounces cream cheese, softened

  • 2 ounces semi-soft goat cheese (chevre)

  • 1 to 2 tablespoons milk

  • 1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed

  • 1 clove garlic, minced

  • 1/8 teaspoon black pepper

  • 3 plum tomatoes, chopped (about 1 cup)

  • 1 small yellow, orange, or green sweet pepper, chopped

  • 2 to 3 tablespoons olive oil


Method:

  1. Preheat oven to 400°F. Place bread shell on a baking sheet.

  2. In a small bowl stir together cream cheese, goat cheese, and enough of the milk to make cheese mixture a spreading consistency. Stir in basil, garlic, and black pepper.

  3. Spread cheese mixture over the bread shell. Spread chopped tomatoes and sweet pepper over the cheese mixture. Drizzle olive oil over all.

  4. Bake for 15 to 20 minutes or until heated through.
