Ingredients

4 individual
Italian loaves (each about 7 inches long)

1/4 cup bottled clear Italian salad dressing
-
1 small onion,
thinly sliced
-
1 small zucchini,
halved lengthwise and sliced
-
1 small green sweet
pepper, cut into thin strips
-
2 cloves garlic,
minced
-
1 large tomato,
seeded and chopped
-
3 cups shredded
provolone or mozzarella cheese (12 ounces)
-
1/4 cup grated
Parmesan cheese
Method:
-
Preheat
broiler. Split bread loaves in half horizontally. Place halves on
large baking sheet, cut sides up.

In a 10-inch skillet heat salad
dressing. Add onion zucchini, sweet pepper, and garlic. Cook
and stir for 3 to 5 minutes or until vegetables are crisp-tender.
Stir in tomato.

Sprinkle half of the provolone or mozzarella cheese
on bottoms of bread halves.

Spoon vegetable mixture over cheese;
sprinkle With remaining provolone or mozzarella and the Parmesan
cheese.

Broil 4 to 5 inches from the heat about 2 minutes or until
cheese melts. Serve immediately.
