Italian Recipes - Italian Vegetable Melt

Ingredients     

  • 4 individual Italian loaves (each about 7 inches long)

  • 1/4 cup bottled clear Italian salad dressing

  • 1 small onion, thinly sliced

  • 1 small zucchini, halved lengthwise and sliced

  • 1 small green sweet pepper, cut into thin strips

  • 2 cloves garlic, minced

  • 1 large tomato, seeded and chopped

  • 3 cups shredded provolone or mozzarella cheese (12 ounces)

  • 1/4 cup grated Parmesan cheese


Method:

  1. Preheat broiler. Split bread loaves in half horizontally. Place halves on large baking sheet, cut sides up.

  2. In a 10-inch skillet heat salad dressing. Add onion  zucchini, sweet pepper, and garlic. Cook and stir for 3 to 5 minutes or until vegetables are crisp-tender. Stir in tomato.

  3. Sprinkle half of the provolone or mozzarella cheese on bottoms of bread halves.

  4. Spoon vegetable mixture over cheese; sprinkle With remaining provolone or mozzarella and the Parmesan cheese.

  5. Broil 4 to 5 inches from the heat about 2 minutes or until cheese melts. Serve immediately.
