Italian Recipes - Italian Po Boy

Ingredients     

  • 2 ounces prosciutto (about 4 slices)

  • 2 cups shredded lettuce

  • 8 pepperoncini,chopped

  • 1 17-ounce package refrigerated cooked beef roast au jus

  • 1 round flat country Italian bread loaf, halved horizontally

  • 4 slices provolone cheese (4 ounces)

  • 1/4 cup bottled clear Italian salad dressing


Method:

  1. In a large skillet cook prosciutto over medium heat about 6 minutes or until browned, turning once. Remove from heat; set aside.

  2. In a small bowl combine shredded lettuce and pepperoncini. Heat roast beef in microwave oven according to package directions.

  3. Remove meat from juices, reserving juices; shred meat. Brush cut sides of the bread with some of the reserved juices.

  4. Arrange meat on bottom half of the bread. Top with provolone cheese, prosciutto, and lettuce mixture. Drizzle with dressing. Add top of bread. Cut Into wedges to serve. Serve with any remaining juices.

NOTE: If the bread is too tall, remove a 1-to 2-inch.thick slice from the center, so that the top of the bread is 1 inch thick. The bread you slice off can be used to make croutons or bread crumbs.
