- Grilled Formaggio Sandwiches
Ingredients
-
4 teaspoons butter,
margarine, or olive oil
-
4 wedges Italian flat
bread (focaccia) (about 1 inch thick), split in half
horizontally
-
8 ounces Scamorza or
provolone cheese, thinly sliced
-
12 to 16 fresh spinach
leaves, washed and patted dry

4 slices bacon or turkey
bacon, halved, crisp-cooked, and drained
Method:

For
each sandwich, spread 1 teaspoon of the butter on uncut sides
of
each wedge of bread. Divide Scamorza cheese evenly among the
unbuttered sides of the focaccia wedge bottoms.

Place three or four
spinach leaves and two half-slices bacon on each cheese-topped
wedge. Top with wedge tops.

Place
sandwiches in a large skillet or on a griddle. Cook over medium-high
heat for 6 to 8 minutes or until the cheese is melted and the bread
is golden brown, turning once.
