Italian Recipes - Chicken-Prosciutto Sandwiches

Ingredients     

  • 6 1/2-inch-thick slices Italian bread

  • 1/3 cup purchased basil pesto

  • 3 ounces thinly sliced prosciutto

  • 2 1/2 cups cooked chicken or turkey cut into bite-size strips (about 12 ounces)

  • 1 14 ounce can artichoke hearts, drained and thinly sliced

  • 1 cup bottled roasted red sweet peppers, drained and cut into strips

  • 1 to 1 1/2 cups shredded provolone cheese (4 to 6 ounces)


Method:

  1. Preheat oven to 450°F. Lightly spread bread slices with pesto.

  2. Layer on the bread in the following order: prosciutto, chicken strips, artichoke hearts, and roasted red peppers.

  3. Line a large baking sheet with foil. Place sandwiches on prepared baking sheet. Cover loosely with foil.

  4. Bake about 8 minutes or until nearly heated through. Uncover and sprinkle with provolone cheese. Bake for 4 to 5 minutes more or until cheese is melted.
