Italian Recipes - Chicken Breasts with Caper Vinaigrette

Ingredients       

  • 1/4 cup oil-packed dried tomato strips

  • 4 skinless, boneless chicken breast halves (about 1 1/4 pounds total)

  • 1/2 cup bottled Italian salad dressing

  • 2 tablespoons capers, drained

  • 1/2 teaspoon bottled minced garlic (1 clove)

  • 1/4 teaspoon black pepper


Method:

  1. Drain tomato strips, reserving oil. Set tomato strips aside. Brush chicken with some of the reserved oil.

  2. Place chicken on the rack of uncovered grill directly over medium coals. Grill for 12 to 15 minutes or until chicken is no longer pink (170°F), turning once and brushing with remaining reserved oil halfway through grilling.

  3. Meanwhile, for vinaigrette, in a small bowl whisk together salad dressing, capers, garlic, and pepper.

  4. Diagonally slice each chicken breast. Spoon vinaigrette over chicken. Top with tomato strips.
