Broiled Pork Chops with Italian Vegetables
Ingredients
-
4 pork loin chops
(bone-in), cut 1/2 inch thick (about 1 1/2
pounds total)

Salt
-
Black pepper
-
Nonstick cooking
spray
-
1 16-ounce package
frozen (yellow, green, and red) peppers and
onion stir-fry vegetables
-
1 1/2 cups
bite-size strips zucchini and/or yellow summer
squash
-
1 teaspoon dried
Italian seasoning, crushed
-
1/2
teaspoon bottled minced garlic (1 clove)
-
1/4
teaspoon
salt
-
2 tablespoons dry
white wine
Method:

Sprinkle pork chops with salt and
pepper. Place chops on the unheated rack of a
broiler pan. Broil 3 to 4 inches from the heat
for 8 to 10 minutes or until chops are slightly
pink in center and juices run clear (160°F).

Meanwhile, coat an unheated large
skillet with nonstick cooking spray. Preheat
skillet over medium-high heat.

Add frozen stir-fry vegetables,
zucchini, Italian seasoning, garlic, and the 1/4
teaspoon salt. Cook and stir for 3 to 4 minutes
or just until vegetables are tender.

Add wine; cook and stir for 1
minute more. Serve chops with vegetable mixture.
