Italian Meats and Poultry Recipes - Wine and Italian Herb Marinated Chicken

Ingredients    

  • 4 to 6 medium chicken breast halves with skin and bones (2 to 3 pounds total)

  • 1 1/2 cups dry white wine

  • 1/2 cup olive oil

  •  tablespoon dried Italian seasoning, crushed

  • 4 cloves garlic, minced


Method:

  1. If desired, remove skin from chicken. Place chicken in a resealable plastic bag set in a shallow dish.

  2. In a small bowl combine wine, olive oil, Italian seasoning, and garlic. Pour over chicken. Seal bag; turn to coat chicken. Marinate in the refrigerator for 8 to 24 hours, turning bag occasionally. Drain chicken, reserving marinade.

  3. Prepare grill for indirect grilling. Test for medium heat above drip pan. Place chicken, bone sides up, on grill rack over drip pan.

  4. Cover and grill for 50 to 60 minutes or until chicken is no longer pink (170°F), turning and brushing once with reserved marinade halfway through grilling. Discard any remaining marinade.
