Italian Meats and Poultry Recipes - Upside-Down Pizza Pie

Ingredients    

  • 1 14 1/2-ounce can diced tomatoes with basil, garlic, and oregano, un-drained

  • 2 cups cubed cooked chicken (about 10 ounces)

  • 1 1/2 cups quartered fresh mushrooms (such as brown or button)

  • 1 8-ounce can pizza sauce

  • 1 cup shredded 4-cheese pizza blend (4 ounces)

  • 1/4 cup grated Parmesan cheese

  • 1 11-ounce package (12) refrigerated breadsticks

  • Milk

  • 1 tablespoon grated Parmesan cheese

  • Desired toppings : (such as sliced green onions, snipped fresh chives,  sliced pitted black or green olives, chopped sweet green or yellow pepper, and/or shredded 4-cheese pizza blend)


Method:

  1. Preheat oven to 375°F. Grease four 12- to 16-ounce individual baking dishes; set aside. In a medium bowl stir together undrained tomatoes, chicken, mushrooms, and pizza sauce.

  2. Spoon chicken mixture into prepared baking dishes. Sprinkle the 1 cup 4-cheese pizza blend evenly over chicken mixture. Sprinkle with the 1/4 cup Parmesan cheese.

  3. Unroll breadstick dough. Separate dough along perforations to form 12 strips. Weave dough strips over filling to form a lattice crust on each baking dish. Depending on the width of your bowls, you may need to cut dough strips to length or piece strips together.  

  4. Brush dough strips with a little milk. Sprinkle with the I tablespoon Parmesan cheese.

  5. Bake about 25 minutes or until breadsticks are golden brown and filling is bubbly. Remove from oven. Let stand for 5 minutes before serving.

  6. Serve in baking dishes or loosen edges and invert onto dinner plates; remove dishes. Sprinkle with desired toppings.
