Recipes - Tomato-Pepper Sauce with Sausage
Ingredients

1 pound sweet Italian
sausage links, cut into 1/2-inch pieces

2 tablespoons olive oil
-
1 yellow sweet pepper,
cut into bite-size strips
-
1 red sweet pepper, cut
into bite-size strips
-
1 cup chopped onion
-
2 cloves garlic, minced
-
1/2 cup dry red wine
-
1 28-ounce can Italian
plum tomatoes in puree, undrained, crushed
-
3 tablespoons tomato
paste
-
1 teaspoon sugar
-
Salt
-
Black pepper
-
Hot cooked pasta
Method:

In a 4-quart Dutch oven cook sausage pieces until brown,
stirring occasionally. Remove from Dutch oven; set
aside. Discard drippings.

Heat olive oil in same Dutch
oven over medium heat. Add sweet peppers, onion, and
garlic. Cook about 5 minutes or until tender, stirring
occasionally.

Carefully add wine. Bring to boiling;
reduce heat. Simmer, uncovered, about 5 minutes or
until wine is nearly evaporated, Stir in un-drained
tomatoes, tomato paste, sugar, and cooked sausage
pieces.

Bring sauce to boiling, stirring to mix well;
reduce heat. Simmer, uncovered, about 10 minutes or
until sauce is desired consistency, stirring
occasionally. Season to taste with salt and black
pepper. Serve sauce over hot cooked pasta.
