Italian Meats and Poultry Recipes - Steak and Shrimp Skewers

Ingredients

  • 18 fresh or frozen peeled, deveined large shrimp with tails

  • 2 tablespoons olive oil

  • 1/4 cup fine dry bread crumbs

  • 1 teaspoon dried parsley

  • 1 clove garlic, minced

  • 1/8 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1 pound beef tenderloin, cut into 1-inch cubes

  • 4 teaspoons olive oil

  • 1 teaspoon dried basil, oregano, and/or thyme, crushed

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper


Method:

  1. Thaw shrimp, if frozen. Rinse shrimp; pat dry with paper towels. In a medium bowl toss shrimp with the 2 tablespoons olive oil.

  2. In a small bowl combine bread crumbs, parsley, garlic, the 1/8 teaspoon salt, and the 1/8 teaspoon pepper; add to shrimp. Toss to coat. Cover and chill for 30 minutes.

  3. Meanwhile, in a medium bowl combine beef cubes, the 4 teaspoons olive oil, the basil, the 1/2 teaspoon salt, and the 1/2 teaspoon pepper. Toss meat to coat.

  4. On six 12-inch metal skewers, alternately thread shrimp and beef, leaving a 1/4-inch space between pieces.

  5. Place skewers on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 10 minutes or until shrimp are opaque and meat is medium-rare doneness, turning once halfway through broiling.
