Steak and Shrimp Skewers
Ingredients

18 fresh or frozen
peeled, deveined large shrimp with tails

2 tablespoons olive
oil
-
1/4
cup fine dry bread
crumbs
-
1 teaspoon dried parsley
-
1 clove
garlic, minced
-
1/8 teaspoon
salt
-
1/8 teaspoon black pepper
-
1 pound beef
tenderloin, cut into 1-inch cubes
-
4 teaspoons olive oil
-
1 teaspoon dried
basil, oregano, and/or thyme, crushed

1/2 teaspoon salt
-
1/2 teaspoon black
pepper
Method:

Thaw shrimp, if frozen. Rinse shrimp; pat dry with
paper towels. In a medium bowl toss shrimp with the
2 tablespoons olive oil.

In a small bowl combine
bread crumbs, parsley, garlic, the 1/8
teaspoon salt, and the 1/8 teaspoon pepper;
add to shrimp. Toss to coat. Cover and chill for 30
minutes.

Meanwhile, in a medium bowl combine beef
cubes, the 4 teaspoons olive oil, the basil, the 1/2
teaspoon salt, and the 1/2 teaspoon pepper. Toss meat
to coat.

On six 12-inch metal skewers, alternately
thread shrimp and beef, leaving a 1/4-inch space
between pieces.

Place skewers on the unheated rack
of a broiler pan. Broil 4 to 5 inches from the heat
about 10 minutes or until shrimp are opaque and meat
is medium-rare doneness, turning once halfway
through broiling.
