Recipes - Saucy Beef and Vegetable Skillet
Ingredients

1 pound boneless beef
round steak
-
Salt
-
Black pepper
-
1 tablespoon olive oil
-
2 cups sliced fresh
mushrooms
-
1 large onion, chopped
-
1 large green sweet
pepper, chopped
-
1 stalk celery, chopped
-
2 cloves garlic, minced
-
4 1/2-ounce can diced
tomatoes, un-drained teaspoon dried basil, crushed,
or 2 teaspoons snipped fresh basil

1/4 teaspoon dried
oregano, crushed, or 1 teaspoon snipped fresh
oregano
-
1/8 to
1/4
teaspoon crushed red
pepper tablespoons grated Parmesan cheese

Hot cooked pasta
(optional)
Method:
-
Trim
fat from meat. Cut meat into 4 serving-size pieces. Season meat with
salt and black pepper. In a large skillet cook meat in hot oil until
brown, turning to brown evenly. Remove meat from skillet; set aside.

Add mushrooms, onion, sweet pepper, celery, and garlic to skillet.
Cook until vegetables are nearly tender. Stir in un-drained tomatoes,
dried herbs (if using), and crushed red pepper.

Return meat to
skillet, spooning vegetable mixture over meat. Cover and simmer
about 1 1/4 hours or until meat is tender, stirring occasionally.
Stir in fresh herbs (if using).

Using a slotted spoon, transfer meat
to a serving platter. Cook vegetable mixture, uncovered, over medium
heat until slightly thickened or until vegetable mixture is the
desired consistency.

Spoon the vegetable mixture over meat and
sprinkle with Parmesan cheese. If desired, serve with hot cooked
pasta.
