Recipes - Pork Chop and Squash Skillet
Ingredients

1 pound boneless pork
sirloin chops, cut 1/2 inch thick

2 tablespoons
all-purpose flour
-
1/2 teaspoon salt
-
1/2 teaspoon black
pepper
-
2 tablespoons olive
oil
-
1 pound winter squash
(such as butternut or banana), peeled, seeded, and
cut into 1-inch cubes (2 cups)
-
1 medium onion, cut into
thin wedges
-
1 tablespoon snipped
fresh oregano or 1 teaspoon dried
oregano, crushed

1/4 cup chicken broth
-
1/4 cup orange juice
-
2 medium zucchini,
quartered lengthwise and cut into

1-inch pieces (about
2 1/2 cups)
Method:
-
Trim fat from pork; if necessary; cut pork into four
serving-size portions. Sprinkle
both sides of each portion with flour, salt, and pepper.

In a large skillet heat olive oil over medium-high heat.
Brown pork in hot oil for 4 minutes, turning once. Add
winter squash and onion; sprinkle with dried oregano, if
using.

Pour chicken broth and orange juice over
vegetables and meat. Bring to boiling; reduce heat.
Cover and simmer for 10 minutes.

Add zucchini. Cover and
cook about 5 minutes more or until pork is tender and no
longer pink. Transfer pork to a serving platter.

Stir fresh oregano, if using, into vegetables. Serve
vegetables with pork.
