Italian Meats and Poultry Recipes - Pesto-Stuffed Chicken Breasts

Ingredients    

  • 4 chicken breast halves with skin and bone (about 2 pounds total)

  • 1/2 cup bottled roasted red sweet peppers, drained and chopped

  • 1/3 cup purchased basil pesto

  • 2 tablespoons finely shredded Parmesan cheese

  • Salt

  • Black pepper.

  • 1 tablespoon butter


Method:

  1. Preheat oven to 375°F. Lightly grease a 2.quart rectangular baking dish; set aside. Using your fingers, gently separate chicken skin from the meat of the breasts along rib edge.

  2. For stuffing, in a small bowl combine roasted red peppers, pesto, and Parmesan cheese. Spoon a rounded tablespoon of the stuffing between the skin and meat of each chicken breast. Sprinkle stuffed chicken breasts with salt and pepper.

  3. Place stuffed chicken breasts, bone sides down, in prepared baking dish. Drizzle with melted butter.

  4. Bake for 45 to 55 minutes or until chicken is no longer pink (170°F).
