Italian Meats and Poultry Recipes - Pasta with Prosciutto

Ingredients                      

  • 6 ounces dried angel hair pasta

  • 2 tablespoons olive oil

  • 1 tablespoon butter or margarine

  • 4 cloves garlic, minced

  • 8 ounces fresh mushrooms, sliced (3 cups)

  • 1 medium red onion, thinly sliced

  • 4 ounces thinly sliced prosciutto, cut into 3/4-inch-wide strips

  • 4 ounces fresh spinach, torn (3 cups loosely packed)

  • 1/3 cup finely shredded Parmesan cheese

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • Parmesan cheese curls or finely shredded Parmesan cheese (optional)


Method:

  1. Cook pasta according to package directions. Drain well. Return to hot pan; cover and keep warm.

  2. Meanwhile, in a very large skillet heat olive oil and butter over medium heat until butter is melted. Add garlic; cook for 30 seconds.

  3. Add mushrooms, red onion, and prosciutto. Cook over medium-high heat for 4 to 5 minutes or until mushrooms and onion are tender, stirring occasionally.

  4. Add spinach to skillet; remove from heat. Add cooked pasta, the 1/3 cup Parmesan cheese, the salt, and pepper. Toss well.

  5. If desired, sprinkle with additional Parmesan cheese.
