Pasta with Prosciutto
Ingredients

6 ounces dried angel
hair pasta
-
2 tablespoons olive oil
-
1 tablespoon butter or
margarine
-
4 cloves garlic, minced
-
8 ounces fresh
mushrooms, sliced
(3
cups)
-
1 medium red onion,
thinly sliced
-
4 ounces thinly sliced
prosciutto, cut into 3/4-inch-wide strips
-
4 ounces fresh
spinach, torn
(3
cups loosely packed)
-
1/3 cup finely shredded
Parmesan cheese
-
1/4 teaspoon salt
-
1/4 teaspoon freshly
ground black pepper
-
Parmesan cheese curls
or finely shredded Parmesan cheese (optional)
Method:
-
Cook pasta according to package directions. Drain well.
Return to hot pan; cover and keep warm.

Meanwhile, in a very large skillet heat olive oil and
butter over
medium heat until butter is melted. Add garlic; cook for
30 seconds.

Add mushrooms, red onion, and prosciutto.
Cook over medium-high heat for 4 to 5 minutes or until
mushrooms and onion are tender, stirring occasionally.

Add spinach to skillet; remove from heat. Add cooked
pasta,
the
1/3
cup Parmesan cheese, the salt, and pepper. Toss well.

If desired, sprinkle with additional Parmesan cheese.
