Recipes - Mediterranean Turkey Burgers
Ingredients

1 pound uncooked ground
turkey

1/2 cup crushed rich round
crackers (about 13 crackers)

1/2 of a 10-ounce package
frozen chopped spinach, thawed and well
drained

1/3 cup chopped onion
-
2
tablespoons Dijon-style mustard

1/4 teaspoon salt

4 ounces
drained fresh mozzarella cheese or mozzarella cheese, cut into 4 slices

1/4 cup bottled
roasted red sweet peppers, drained and
cut into strips

4 white or wheat
kaiser rolls, split and toasted
Method:

In a large bowl combine turkey, crushed crackers,
spinach, onion, mustard, and salt. Shape mixture into
four 3/4-inch-thick patties. If necessary, cover and
chill for 30 minutes or until firm.

Place patties on the
rack of an uncovered grill directly over medium
coals. Grill for 14 to 18 minutes or until done
(165°F), turning once halfway through grilling time.

Top burgers with mozzarella and roasted red pepper
strips. Grill for 2 to 3 minutes more or until cheese
melts. Serve burgers on rolls.
NOTE: The internal color of a burger is not a reliable
doneness indicator. A turkey patty cooked to 165°F is
safe, regardless of color. To measure the doneness of a
patty, insert an instant-read thermometer through the
side of the patty to a depth of 2 to 3 inches.
