Italian Meats and Poultry Recipes - Italian-Style Burgers

Ingredients

  • 1/2 cup fine dry bread crumbs

  • 1/2 cup finely chopped onion

  • 1/3 cup milk

  • 2 tablespoons grated Parmesan cheese

  • 1 tablespoon dried basil, crushed

  • 1/2 teaspoon garlic salt

  • 1/4 teaspoon black pepper

  • 1 1/2 pounds lean ground beef

  • 8 slices provolone cheese

  • 8 kaiser rolls with sesame seeds, split and toasted

  • Lettuce (optional)

  • Yellow and/or red tomato slices (optional)

  • Purchased pasta sauce, warmed (optional)


Method:

  1. In a medium bowl stir together bread crumbs, onion, milk, Parmesan cheese, basil, garlic salt, and pepper. Add meat; mix well. Shape meat mixture into eight 3,4-inch-thick patties.

  2. Place patties in a shallow container. Cover and chill for 1 hour. Place patties on the rack of an uncovered grill directly over medium coals.

  3. Grill for 14 to 18 minutes or until done (160°F), * turning once halfway through grilling and topping each burger with a cheese slice for the last 1 minute of grilling.

  4. Serve burgers on rolls. If desired, top with lettuce, tomatoes, and/or pasta sauce.

Note: The internal color of a burger is not a reliable doneness indicator. A beef patty cooked to 160°F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.
