Baked Chicken Breasts
Ingredients
4 chicken breast
halves with skin and bone (about 2 pounds
total)
1/2 cup dry white wine
1/4 cup
olive oil
2 tablespoons white wine
vinegar
2 tablespoons water
1 tablespoon lemon juice
1 tablespoon dried
Italian seasoning, crushed
3 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon
black pepper
Salt
Black pepper
1/3 cup finely
shredded Parmesan cheese
Method:
Skin chicken, if desired. Place chicken in a large
resealable plastic bag set In a shallow bowl.
For
marinade, In a small bowl combine dry white wine, olive
oil, white wine vinegar, the water, lemon juice, Italian
seasoning, garlic, the 1/4
teaspoon salt, and the 1,4 teaspoon pepper. Pour
marinade over chicken. Seal bag; turn to coat chicken.
Marinate in the refrigerator for 2 to 6 hours, turning
bag occasionally.
Preheat oven to 375°F, Drain chicken,
discarding marinade. Sprinkle chicken with additional
salt and pepper. Arrange chicken In a shallow baking
pan.
Bake for 45 to 55 minutes or until chicken is
tender and no longer pink (170°F). Sprinkle with
Parmesan cheese. Broil 4 to 5 inches from heat about 4
minutes or until cheese Is melted and beginning to
brown.
