Italian Fish Recipes - Tomato Bisque Shrimp over Penne

Ingredients

  • 1 pound fresh or frozen medium shrimp

  • 2 tablespoons butter or margarine

  • 2 cups sliced fresh mushrooms

  • 1/2 cup chopped onion

  • 1/2 cup chopped green sweet pepper

  • 2 cloves garlic, minced

  • 1 10 3/4-ounce can condensed tomato bisque soup

  • 2/3 cup water  

  • 1/2 teaspoon dried Italian seasoning, crushed

  • Hot cooked penne or rotini pasta

  • Shredded or grated Parmesan cheese (optional)


Method:

  1. Thaw shrimp, if frozen. Peel and devein shrimp. Rinse shrimp; pat dry with paper towels. Set aside.

  2. In a large skillet melt butter over medium heat. Add mushrooms, onion, sweet pepper, and garlic; cook about 5 minutes or until vegetables are tender.

  3. Stir in tomato bisque soup, the water, and Italian seasoning. Bring to boiling; reduce heat. Cover and simmer for 10 minutes.

  4. Add shrimp to skillet; cook for 3 to 4 minutes or until shrimp are opaque. Serve with hot cooked pasta. If desired, top individual servings with Parmesan cheese.
