- Tomato Bisque Shrimp over Penne
Ingredients
-
1 pound fresh or frozen
medium shrimp
-
2 tablespoons butter or margarine
-
2 cups sliced fresh
mushrooms
-
1/2 cup chopped onion
-
1/2 cup chopped green
sweet pepper
-
2 cloves garlic,
minced
-
1 10 3/4-ounce can
condensed tomato bisque soup
-
2/3 cup water
-
1/2 teaspoon
dried Italian seasoning, crushed

Hot cooked penne or
rotini pasta
-
Shredded or grated
Parmesan cheese (optional)
Method:

Thaw
shrimp, if frozen. Peel and devein shrimp. Rinse shrimp; pat dry
with paper towels. Set aside.

In a large skillet melt butter over
medium heat. Add mushrooms, onion, sweet pepper, and garlic; cook
about 5 minutes or until vegetables are tender.

Stir in tomato
bisque soup, the water, and Italian seasoning. Bring to boiling;
reduce heat. Cover and simmer for 10 minutes.

Add shrimp to skillet;
cook for 3 to 4 minutes or until shrimp are opaque. Serve with hot
cooked pasta. If desired, top individual servings with Parmesan
cheese.
