Italian Fish Recipes - Shrimp Italian

Ingredients

  • 8 ounces fresh or frozen cooked, peeled, and deveined medium shrimp

  • 1/2 cup chopped onion

  • 1 tablespoon butter or margarine

  • 1 10 3/4-ounce can condensed cream of shrimp or cream of mushroom soup

  • 2/3 cup half-and-half or light cream

  • 1 4-ounce can (drained weight) sliced mushrooms, drained

  • 1/3 cup grated Parmesan cheese

  • 1 teaspoon dried Italian seasoning, crushed

  • 4 ounces dried penne or gemelli pasta (about 1 cup), cooked and drained

  • 3 tbsp grated Parmesan cheese


Method:

  1. Preheat oven to 350°F. Thaw shrimp, if frozen. Rinse shrimp; pat dry with paper towels. In a medium saucepan cook onion in hot butter until tender.

  2. Stir in shrimp, cream of shrimp soup, half-and-half, mushrooms, the 1/3 cup  Parmesan cheese, and the Italian seasoning. Stir in cooked pasta.

  3. Spoon into a 1 1/2-quart casserole. Sprinkle with the 3 tablespoons Parmesan cheese.

  4. Bake about 40 minutes or until heated through.
