Italian Fish Recipes - Shrimp Fettuccine

Ingredients

  • 1 pound fresh or frozen medium shrimp in shells

  • 1/4 cup butter or margarine

  • 2 to 3 tsp garlic powder

  • 8 ounces dried fettuccine

  • 1/2 cup whipping cream

  • 1/2 cup grated Parmesan cheese

  • 4 ounces Monterey Jack cheese with jalapeno chile peppers, shredded (1 cup)

  • 2 tbsp snipped fresh parsley


Method:

  1. Preheat oven to 350F. Grease a 2-quart casserole; set aside. Thaw shrimp, if frozen. Peel and devein shrimp. Rinse shrimp; pat dry with paper towels.

  2. In a large skillet heat butter over medium-high heat. Add shrimp and garlic powder. Cook, stirring frequently, for 1 to 3 minutes or until shrimp are opaque. Set aside.

  3. Cook fettuccine according to package directions; drain. Return fettuccine to hot pan; add whipping cream and parmesan cheese.

  4. Toss over medium heat until cheese has melted. Remove from heat. Add shrimp mixture; toss to combine.

  5. Spoon shrimp-pasta mixture into prepared casserole. Sprinkle with Monterey Jack cheese and pasley.

  6. Bake for 10 to 15 minutes or until heated through and cheese on top is melted.
