Ingredients

Butter
-
2/3 cup whipping cream
-
1/3 cup milk
-
3 eggs
-
1/3 cup all-purpose
flour
-
1/4 cup sugar
-
2 tablespoons butter,
melted
-
2 teaspoons vanilla
-
2 teaspoons finely
shredded lemon peel
-
1/8 teaspoon salt
-
2 1/2 cups thinly sliced
Italian plums
(or other plums) or pears
-
2 tablespoons sugar
-
Sweetened whipped
cream (optional)
Method:

Preheat oven to 375°F. Generously butter the bottom and
side of a 9.inch pie plate. Set aside.

In a medium bowl
combine whipping cream, milk, eggs, flour, the 1/4
cup sugar, the melted butter, vanilla, 1 teaspoon of the
lemon peel, and the salt. Beat with an electric mixer on
low speed until smooth.

Pour about half of the batter into prepared pan. Arrange
plums or
pears on top. Sprinkle with the remaining lemon peel.
Carefully pour remaining batter over fruit. Sprinkle
with the 2 tablespoons sugar.

Bake for 50 to 55 minutes
or until puffed and lightly browned. Cool in pan on a
wire rack for 15 minutes. (The pancake will fall as it
cools.) Serve warm. If desired, serve with sweetened
whipped cream.
