Italian Appetizers Recipes - Roasted Plum Tomatoes with Chevre and Pesto

Ingredients   

  • 10 plum tomatoes, halved lengthwise (1 1/2 to 2 pounds)

  • 1/4 teaspoon dried thyme, crushed

  • Salt

  • Black pepper

  • 1/3 cup purchased pesto

  • 1/3 cup soft goat cheese (chevre)

  • 2 tablespoons snipped fresh parsley or basil


Method:

  1. Preheat oven to 400F. Sprinkle cut sides of tomato halves with thyme, salt, and pepper. Place tomatoes, cut sides up, in a greased shallow baking pan.

  2. Bake about 5 minutes or until heated and beginning to soften.

  3. Spoon a scant teaspoon of the pesto onto each tomato half. Top each with a scant teaspoon of the goat cheese.

  4. Bake about 2 minutes more or until cheese is softened. Sprinkle tomatoes lightly with parsley.
