Roasted Plum Tomatoes with Chevre and Pesto
Ingredients

10 plum tomatoes, halved
lengthwise
(1 1/2
to 2
pounds)

1/4
teaspoon dried thyme, crushed
-
Salt
-
Black pepper
-
1/3 cup purchased pesto
-
1/3 cup soft goat cheese (chevre)
-
2 tablespoons snipped
fresh parsley or basil
Method:
-
Preheat
oven to 400F. Sprinkle cut sides of tomato halves with thyme, salt,
and pepper. Place tomatoes, cut sides up, in a greased shallow
baking pan.

Bake about 5 minutes or until heated and beginning to
soften.

Spoon a scant teaspoon of the pesto onto each tomato half.
Top each
with
a
scant
teaspoon of the goat cheese.

Bake about 2 minutes more or
until
cheese is softened. Sprinkle tomatoes lightly with parsley.
