Italian Appetizers Recipes - Pepper, Olive and Cheese Skewers

Ingredients

  • 4 to 6 very thin slices prosciutto or smoked ham, cut into 1/2-inch-wide strips

  • 8 ounces provolone or Asiago cheese, cut into 3/4-inch cubes

  • 1 16-ounce jar whole cherry peppers, drained

  • 1 12-ounce jar pepperoni salad peppers, drained

  • 20 to 24 pitted ripe olives, drained

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar


Method:

  1. Wrap a prosciutto strip around each provolone cheese cube; set aside. On 6-inch wooden skewers, alternately thread wrapped provolone cheese, cherry peppers, pepperoni peppers, and olives. Place on a large serving platter.

  2. Serve immediately or cover and chill for up to 24 hours. In a small bowl whisk together olive oil and balsamic vinegar. Serve with skewers.
