Italian Appetizers Recipes - Marinated Mozzarella with Basil

Ingredients   

  • 1/4 cup fresh basil leaves

  • 1/4 cup olive oil

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon coarsely ground black pepper

  • 1 teaspoon finely shredded lemon peel

  • 1/4 teaspoon salt

  • 1 pound fresh mozzarella cheese

  • Tomato slices (optional)

  • Baguette slices or crackers


Method:

  1. Set aside several whole basil leaves for garnish. Using a sharp knife, chop remaining basil. In a medium bowl combine chopped basil, olive oil, balsamic vinegar, pepper, lemon peel, and salt.

  2. Cut mozzarella into 1-inch cubes; toss cheese cubes gently with herb and oil mixture until cheese is well coated. Cover and let stand for 30 minutes before serving.

  3. Transfer cheese mixture to a serving dish; garnish with reserved basil leaves and, if desired, tomato slices. Serve with baguette slices or crackers.

MAKE-AHEAD DIRECTIONS: Prepare as directed in step 1 Cover and chill for up to 5 days. Let stand at room temperature for 30 minutes before serving.
