Crumb-Coated Veggie Dunkers
Ingredients

Nonstick cooking spray
-
2/3 cup seasoned fine
dry bread crumbs

2 tablespoons grated Parmesan
cheese
-
1/8 teaspoon salt
-
2 slightly beaten egg
whites
-
1 tablespoon milk
-
4 cups cauliflower
florets and/or broccoli florets

1
tablespoons butter
or margarine, melted

1 15-ounce can pizza sauce
Method:

Preheat
oven to 400F. Lightly coat a 15x 10x 1-inch baking pan with nonstick
cooking spray; set aside. In a large resalable plastic bag combine
bread crumbs, Parmesan cheese, and salt.

In another large resalable
plastic bag combine egg whites and milk. Add vegetables to the
plastic bag with the egg white mixture. Close bag and shake to coat
well.

Add vegetables to plastic bag with crumb mixture, Close bag
and shake to coat well. Place coated vegetables on the prepared
baking pan. Drizzle melted butter over vegetables.

Bake about 20
minutes or until golden brown, stirring twice. Meanwhile, in a
small saucepan heat pizza sauce over medium heat. Serve vegetables
with warm pizza sauce.
