Italian Appetizers Recipes - Artichoke and Olive Pizza Wedges

Ingredients   

  • 12-inch Italian bread shell (such as Boboli brand)

  • 6-ounce jar marinated artichoke hearts, drained

  • 1 1/4 cups shredded mozzarella cheese (5 ounces)

  • 1 cup sliced fresh mushrooms

  • 1/3 cup pitted black olives (such as gaeta, sicilian, or kalamata), drained and sliced

  • 2 tablespoons sliced pimiento, drained

  • 1 to 2 tablespoons snipped fresh basil

  • 2 teaspoons snipped fresh thyme

  • 1/3 cup shredded Parmesan cheese


Method:

  1. Preheat oven to 450°F. Place bread shell on a baking sheet or pizza pan; set aside. If necessary, cut up any large artichoke heart pieces.

  2. Sprinkle 1 cup of the mozzarella cheese over bread shell. Top with artichoke pieces, mushrooms, olives, pimiento, basil, and thyme.

  3. Sprinkle with remaining 1/4 cup mozzarella cheese and the Parmesan cheese.

  4. Bake for 8 to 10 minutes or until cheese is melted. Cut into wedges and serve warm.
