- Antipasto-Style Relish Tray
Ingredients

1 recipe Salami Rolls

1 recipe Italian Cheese
Bites

1 7-ounce jar roasted
red and/or yellow sweet peppers, drained and cut
into strips

2 6-ounce jars
marinated artichoke hearts, drained

8 ounces black olives (such as gaeta,
sicilian, or kalamata) or herbed green
olives, drained and pitted

Capers, drained
-
Thinly sliced ciabatta
or Italian bread (optional)
Method:

Arrange
Salami Rolls, Italian Cheese Bites, roasted red peppers, artichoke
hearts, and olives on serving platter(s).

Sprinkle artichokes with
capers. If desired, serve with thinly sliced ciabatta or Italian
bread.
SALAMI ROLLS: Using 1/4 cup purchased black olive
paste, spread some of the olive paste on each of 24 thin slices
garlic salami (about 4 ounces). Place a strip of purchased roasted
red pepper along one edge of each salami slice; roll up. Cut in half
crosswise.
ITALIAN CHEESE BITES:
Cut 4
ounces thinly sliced prosciutto into narrow strips. Cut 1 1/2 pounds Taleggio, Asiago, and/or aged provolone cheese into bite-size
pieces. Wrap a prosciutto strip around each cheese piece, securing
with wooden picks if necessary.
