Antipasto Kabobs
Ingredients

6 ounces sliced
salami
-
6 ounces mozzarella
or provolone cheese, cubed

1 1/2 cups cantaloupe
and/or honeydew melon balls

1 cup
purchased large pitted herbed green olives and/or large pitted ripe olives

3/4 cup cherry
tomatoes
Method:

On six
6-inch bamboo skewers, alternately thread salami slices, cheese
cubes, and melon balls, folding salami slices if desired.

On six
additional 6-inch skewers, thread salami slices, cheese cubes,
olives, and cherry tomatoes, folding salami slices if desired. Place
on a serving plate.

Serve immediately or cover and chill for up to 2
hours before serving.
Note:
Herbed
green olives can be found in Italian markets. However, if you want
to make your own, here's how. In a small bowl combine I cup large
pitted green olives, pimento-stuffed olives, and/or pitted ripe
olives; 11h teaspoons olive oil; 1 clove garlic, minced; 1/2
teaspoon dried Italian seasoning, crushed; and 1/8 teaspoon
crushed red pepper. Stir until olives are evenly coated. Cover and
chill for at least 2 hours.
