Indian Seafood Recipes - Spiced Grilled Mackerel

Ingredients

  • 4 mackerel, filleted

  • juice of 1 lemon

  • 60 ml/ 4 tbsp chopped fresh coriander ( cilantro)

  • 10 ml/2 tsp garam masala

  • 5 ml/1 tsp ground cumin

  • 5 ml/1 tsp chili powder

  • salt and pepper

  • 45 ml/3 tbsp ghee

  • 1 lemon, cut into wedges


Method:

  1. Score the skin of the fish in several with a sharp knife. Mix the lemon juice, half the coriander, the garam masala, cumin, chili powder and salt and pepper.  

  2. Pour over the mackerel and leave to marinate for 2 hours, Turing once and brushing with the marinade.

  3. Brush half the ghee over the skin and grill (broil) for 5 minutes. Turn over , brush with the remaining ghee and grill for a further 5minutes.

  4. Serve  garnished with the remaining coriander and lemon wedges.
