Indian Seafood Recipes - Prawns in Pink Sauce

Ingredients

  • 60ml/4 tbsp tomato puree (paste)

  • 175 ml/6 fl oz/3/4 cup water

  • 250ml/8 fl oz/1 cup single (light) cream

  • 5 ml/1 tsp grated ginger root

  • 1.5ml/1/2 tsp cayenne

  • 20 ml/4 tsp lemon juice

  • 5 ml/1 tsp ground cumin and pepper

  • 2.5 ml/1/2 tsp sugar

  • 45 ml/3 tbsp oil

  • 15ml/ 1 tbsp mustard seeds

  • 3 cloves garlic, chopped

  • 900g/2 lb peeled prawns (shrimp)


Method:

  1. Mix together the tomato puree, water, ginger, cayenne, lemon juice, salt, pepper and sugar. Heat the oil and  fry the mustard seeds until they start crackling.

  2. Add the garlic then the prawns and stir-fry for 2 minutes. Pour in the sauce mixture and stir over a low heat until the sauce starts bubbling. Serve at once with rice and vegetables.
