Indian Seafood Recipes - Prawn in Spinach

Ingredients

  • 450 g/1lb peeled prawns (shrimp)

  • salt

  • 60 ml/4 tbsp chopped fresh coriander (cilantro)

  • 5 ml/1 tsp cumin seeds

  • 5 cloves garlic

  • 4 green chilies, seeded

  • 2 dried red chilies, seeded

  • 75 ml/5 tbsp oil

  • 45 ml/3 tbsp ghee

  • 5 onions, sliced

  • 450 g/1lb spinach, chopped

  • 5 ml/1 tsp ground turmeric

  • 600 ml/ 1 pt/2 1/2 cups water


Method:

  1. Sprinkle the prawns with salt and set aside. Grind the coriander, cumin seeds, garlic and chilies to a paste and mix the paste with the prawns. 

  2. Heat hail the oil and ghee and fry the onions until browned. Add the prawn mixture, spinach, turmeric and salt and simmer, stirring, until the mixture is well browned.

  3.  Add the water, bring to the boil then simmer until the ingredients are cooked and the ghee appears on the surface. Serve hot with rice and vegetables.
