Indian Seafood Recipes - Prawn Cutlets

Ingredients

  • 450g/1b peeled prawns (shrimp), minced

  • 50g/2 oz/1/4 cup desiccated (shredded) coconut

  • 4 green chilies, chopped

  • 1 bunch fresh coriander ( cilantro), chopped

  • 2 cloves garlic, crushed

  • 5 ml/1 tsp cumin seeds

  • 2.5ml/1/2 tsp ground turmeric

  • 1 egg, beaten

  • 50og/2 oz/1/2 cup breadcrumbs

  • 45 ml/3 tbsp ghee


Method:

  1. Mix together all the ingredients except the egg, breadcrumbs and ghee and shape into flat cutlets. Dip in beaten egg then in breadcrumbs.

  2. Heat the ghee and fry the cutlets for about 10 minutes each side until cooked through and nicely browned. Serve hot with rice and vegetables.
