Indian Seafood Recipes - Prawn Curry

Ingredients

Batter

  • 45 ml/3 tbsp ghee

  • 1 onion, chopped

  • 2.5 cm/1 in ginger root, chopped

  • 3 cloves garlic, crushed

  • 10 ml/2 tsp ground coriander (cilantro)

  • 10 ml/2 tsp ground cumin

  • 5 ml/1 tsp ground turmeric

  • 5 ml/1 tsp chili powder

  • 450 g/1lb peeled prawns (shrimp)

  • 3 tomatoes, skinned and chopped

  • 30 ml/2 tsp wine vinegar

  • 10 ml/2 tsp tomato puree (paste)


Method:

  1. Heat the ghee and fry the onion,  ginger and garlic until soft and lightly  browned. Add the spices and fry for 2  minutes, stirring.

  2. Add the prawns and fry for 5minutes, stirring. Add the tomatoes, wine vinegar and fry until the liquid has evaporated and serve hot with rice.
