Fish with Okra
Ingredients

30 ml/2 tbsp ghee
-
30 ml/2
tbsp mustard oil
-
4 cardamom pods
-
5 ml/1 tsp sugar
-
225 gl8 oz
onions, sliced
-
150 ml/1/4 pt/2/3 cup natural
(plain) yoghurt
-
450 g/1 lb cod fillets, cut into
chunks
-
225 gl8 oz okra, chopped
-
4 dried red chilies, seeded and ground
-
2.5 cm/1 in ginger root,
chopped
-
salt
Method:
-
Heat the ghee
and oil and fry the cardamom pods
for 1 minute. Add the sugar and stir
until it turns brown. Add the onions
and fry until browned.

Beat the yoghurt to a
smooth paste and add to the pan with the
fish, okra, chilies, ginger and salt.
-
Cover and
simmer for 10 minutes until the fish
is tender. Serve hot or cold with
rice.
