Indian Seafood Recipes - Fish with Okra

Ingredients

  • 30 ml/2 tbsp ghee

  • 30 ml/2 tbsp mustard oil

  • 4 cardamom pods

  • 5 ml/1 tsp sugar

  • 225 gl8 oz onions, sliced

  • 150 ml/1/4 pt/2/3 cup natural (plain) yoghurt

  • 450 g/1 lb cod fillets, cut into chunks

  • 225 gl8 oz okra, chopped

  • 4 dried red chilies, seeded and ground

  • 2.5 cm/1 in ginger root, chopped

  • salt


Method:

  1. Heat the ghee and oil and fry the car­damom pods for 1 minute. Add the sugar and stir until it turns brown. Add the onions and fry until browned.

  2. Beat the yoghurt to a smooth paste and add to the pan with the fish, okra, chilies, ginger and salt.

  3. Cover and simmer for 10 minutes until the fish is tender. Serve hot or cold with rice.
