Ice Cream Recipes - Coffee Sauce (Salsa Al Cafes)

Ingredients

  • 300 ml/10 fl oz milk

  • 3 teaspoons instant espresso coffee powder

  • 3 egg yolks

  • 50 g/2 oz caster sugar


Method:

  1. In a heavy-bottomed saucepan, bring the milk and coffee to the boil; set aside.

  2. In a bowl, beat the egg yolks and sugar together until pale and creamy. Pour the hot milk on to the egg mixture, stirring all the time. Return the sauce to the cleaned saucepan and cook over a low heat, stirring until thickened.
