Ingredients

fl oz milk
500 ml/16 fl oz
double cream
3 teaspoons instant espresso coffee powder
10 egg yolks
150 g/5 oz caster
sugar
To serve
whipped cream
powdered chocolate
Method:
In a
heavy-bottomed saucepan, bring the milk, cream
and coffee to the boil; set aside.
In a bowl, beat
the egg yolks and sugar together until pale and
creamy. Slowly add the hot milk, stirring
continuously with a balloon whisk.
Return the
mixture to the cleaned saucepan over a low heat and
stir with a wooden spoon until the custard thickens
enough to coat the back of the spoon. Strain the
custard into a bowl and leave to cool.
Churn in an ice
cream machine. Serve with fresh whipped cream and a
sprinkling of powdered chocolate.
